What I eat in a day to stay happy and healthy:
Breakfast: congee with poached egg 🥚
Snack 1: banana oatmeal muffin (no flour & sugar added) with vanilla bean Greek yogurt & homemade granola
Lunch: chicken sandwiches with stir-fried mushrooms in truffle oil and balsamic vinegar and salad
Snack 2 pre workout: pea protein banana raspberry oatmeal muffin (no flour & sugar added) with vanilla bean Greek yogurt & homemade granola
Dinner: red rice with grilled salmon and salad
Drinks: soy coffee latte , water, coconut water
Update: I started eating brown & dark rice more often than before as my stomach digestion is back to normal now. I still eat less beans and legume (Read my article).
